Ingredients
  • 4 large carrots
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1/2 tsp dried thyme
Directions
  • Step 1 1. Preheat oven to 375 degrees.
  • Step 2 2. Line a baking tray with parchment paper and set aside.
  • Step 3 3. Peel and cut your carrots in half then cut the halves length-wise.
  • Step 4 4. Place peeled and cut carrots onto your parchment lined tray.
  • Step 5 5. Top your carrots with remaining ingredients and toss to coat evenly.
  • Step 6 6. Bake for 30 min.
  • Step 7 7. Remove from oven, to toss carrots and return to oven for another 10 minutes.
  • Step 8 8. Remove and drizzle with your favorite dipping sauce or my Radish Leaf dip.
  • Step 9 Perfect as a side or an addition to your salad or warm veggie bowl.
