2 Ingredient Plantain Pancakes

Ingredients
- 2 sweet plantains, peeled and roughly chopped
- 4 pasture-raised eggs
- Coconut oil to grease pan
- 1/2 tsp cinnamon (optional)
Directions
- Step 1 1. Blend plantains and eggs in a food processor or high speed blender until smooth.
- Step 2 2. In a large skillet or cast iron pan over medium heat, melt 1 tbsp of coconut oil.
- Step 3 3. Poor 2 tbsp scoops of batter into the hot pan. Cook until the pancakes start to bubble. Flip and cook for another 2 minutes or until bolden brown.
- Step 4 4. Serve with berries, or your favorite pancake toppings.
- Step 5 Note: when choosing your toppings, keep in mind that the pancakes will already be slightly sweet.
