Ginger Mint Lemonade

Ingredients
- Rind and Juice of 4 organic lemons
- 2 quarts water
- 1 cup chopped fresh ginger, unpeeled
- 6 tbsp organic honey
- Mint
Directions
- Step 1 1. Using a vegetable/potato peeler, peel the rinds off the lemons and set aside.
- Step 2 2. Juice the same four lemons, removing the seeds and set aside.
- Step 3 3. Bring water to a boil.
- Step 4 4. While water is boiling, chop your ginger and set aside.
- Step 5 5. In a large bowl, place the lemon rinds and ginger
- Step 6 6. Pour boiling water over the lemon rinds and ginger, and steep for 5 – 8 minutes.
- Step 7 7. Strain and stir in the honey.
- Step 8 8. Let chill, add the lemon juice, ice and a few sprigs of fresh mint.
- Step 9 Note: For carbonated ginger all, steep ginger and lemon peels in only 1 quart boiling water. Then just before serving, add 1 quart cold soda water. Stir and serve.
