Cast-iron Chicken Kabobs

Ingredients
- Marinade:
- 1 lb. chicken breasts
- 1 tbs (Primal Palate) Super Gyro seasoning
- 1/2 tbsp Garlic powder
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
- 1/3 cup Olive oil
- 2 tbsp Lemon juice
- For cooking:
- 1 Red onion, cut into squares
- 1 zucchini, sliced or cut into 1 inch cubes
- Other veggies of choice are optional
- 2 tbsp Olive oil
Directions
- Step 1 Cut chicken breasts into 1-inch cubes.
- Step 2 Combine the chicken cubes well with the marinade. Store in lock tight container and let marinade overnight.
- Step 3 Remove chicken from fridge and set aside.
- Step 4 Cut your veggies into roughly 1-inch pieces.
- Step 5 Heat olive oil on medium-high heat in a 12″ cast iron skillet.
- Step 6 Start stacking your veggies and chicken kabobs in whatever order you wish. They can be customized to everyone’s desire.
- Step 7 Once pan is heated, sear the kabobs for about 6-9 minutes on each side or until chicken is cooked through.
