Garlic Smashed Potatoes

Ingredients
- 1.5 lb. baby purple potatoes
- 5 tbsp. melted butter (or ghee)
- 3 cloves garlic, minced
- 1 tsp. fresh thyme leaves
- Sea salt & black pepper
Directions
- Step 1 Preheat the oven to 425°. In a large pot, cover potatoes with water and add a generous pinch of salt. Bring water to a boil and simmer until potatoes are tender, about 15 minutes. Drain and let sit until cool enough to handle.
- Step 2 In a medium sized bowl, toss potatoes with melted butter, garlic, and thyme.
- Step 3 Transfer potatoes to a baking sheet.
- Step 4 Using the bottom of a small glass or mason jar, press down on potatoes to smash them flat.
- Step 5 Season with salt and pepper. Pour any leftover butter mixture over potatoes.
- Step 6 Bake until bottoms of potatoes are beginning to crisp and golden, about 25 minutes.
