Ingredients
  • 1 large red onion, peeled and thinly sliced
  • 3/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 teaspoon fine sea salt
  • 2 tablespoons Maple syrup or Honey
Directions
  • Step 1 1. Thinly slice red onion with handheld mandolin or knife. Place the thinly-sliced onion into a large mason jar or lock-tight container & set aside.
  • Step 2 2. Heat the vinegar mixture in a small saucepan, stirring together the vinegar, water, salt and maple.
  • Step 3 3. Cook over medium-high heat until the mixture reaches a simmer.
  • Step 4 4. Pour the hot vinegar mixture over the onions, making sure to submerge all the onions under the vinegar mixture.
  • Step 5 5. Let the onions marinate for 30 minutes.
  • Step 6 6. Serve immediately, or refrigerate the onions in sealed container for up to 2 weeks.
