Chicken Caesar Hack (Dairy-Free)

Ingredients
- 1 Store bought & cooked rotisserie chicken
- Lettuce of choice (kale, romaine, green leaf lettuce)
- Caesar Dressing:
- 1 Egg Yolk
- 1 Tbsp Dijon Mustard
- 3 cloves Garlic
- 4 whole Anchovy Filets
- 1 tsp Black Pepper
- Juice of 1 lemon
- 1/2 cup Extra Virgin Olive Oil
Directions
- Step 1 DRESSING
- Step 2 1. Combine all ingredients except olive oil into a food processor.
- Step 3 2. Once all ingredients are combined, add in olive oil and blend.
- Step 4 3. Store in fridge while you prepare your salad.
- Step 5 SALAD
- Step 6 4. Using your hands, shred the chicken and set aside.
- Step 7 5. In a large bowl, add chopped romaine lettuce & shredded and any other toppings you desire.
- Step 8 6. Drizzle your delicious Caesar dressing over your salad and toss to coat well.
