Baked Paleo Pork Chops

Ingredients
- 4 (4-ounce) boneless pork chops
- 3 tbsp olive oil
- sea salt
- freshly ground black pepper
- 1 tbsp chopped fresh thyme
- 1 onion, peeled and cut into 8 wedges
- 3 green apples, peeled, cored and cut into 8 wedges
- 8 slices of bacon, chopped into bite sized pieces
Directions
- Step 1 1. Preheat oven to 425°.
- Step 2 2. Sprinkle the chops with salt & pepper.
- Step 3 3. In a large cast iron pan heat 2 tablespoons of olive oil over high heat.
- Step 4 4. Add the pork to pan and cook 3 minutes on each side.
- Step 5 5. Remove the pan from the heat and place the pork onto a side plate.
- Step 6 6. In the pan add some more olive oil, apple and onion wedges and bacon, thyme, salt and pepper. Toss to coat.
- Step 7 7. Put in the oven and bake for 25 minutes.
- Step 8 8. Remove, add the pork on top, and bake for another 10 minutes.
- Step 9 9. Remove from the oven, and enjoy with your favorite green veggies or with a green leafy salad.
