Ingredients
- 3 lbs grass-fed stew meat
- 1 tbsp sea salt
- 2 tbsp avocado oil
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 tbsp fresh thyme, chopped
- 3 sweet potatoes, peeled & chopped
- 6 carrots, peeled & chopped
- 2 celery ribs, chopped
- 2 cups bone broth (can use chicken stock)
- 1/2 balsamic vinegar
- 2 tbsp coconut oil
Directions
- Step 1 Tip: do all your chopping and prepping first, then start your cooking.
- Step 2 1. Place beef in a large bowl, and coat with sea salt.
- Step 3 2. Heat the avocado oil in a large pan, on medium-high heat.
- Step 4 3. Add meat to pan once hot, brown beef for about 3 min, toss and brown for another 3 minutes.
- Step 5 4. Place the browned meat into the bottom of your crockpot.
- Step 6 5. Turn heat down to medium, and add the onions to your skillet, cook for 6 minutes.
- Step 7 6. Add the garlic & thyme, mix and cook for another 3 minutes. Then turn off heat, and add mixture to crocpot.
- Step 8 7. Add to crocpot: sweet potatoes, celery, carrots, bone broth, balsamic vinegar, coconut oil.
- Step 9 8. Cover crocpot and cook on high for 4 hours.
- Step 10 9. Serve as is, or with some freshly sliced avocado.
