Chicken Caesar Collard Wrap

Ingredients
- 4 large collard green leaves
- 2 1/2 cups shredded chicken (find easy recipe here)
- 1/2 to 1 cup of paleo caesar dressing (find easy recipe here)
- sliced carrots
- slices cucumber
- avocado slices (optional)
Directions
- Step 1 COLLARD GREENS
- Step 2 1. Cut of the stem and then shave the top of the remaining stem that’s attached to the leaf.
- Step 3 2. Prepare a large bowl filled with ice cold water, set aside.
- Step 4 3. Place one collard green leaf in at a time, into a large pot of boiling water for about 20 seconds on each side.
- Step 5 4. Remove the leaf from boiling water and place directly into the bowl of ice water.
- Step 6 5. Set on top of paper towels to soak up the water.
- Step 7 FILL & ROLL
- Step 8 1. In a small bowl, combine your shredded chicken & caesar dressing.
- Step 9 2. Lay out your collard leaf and spread your chicken mix in the middle.
- Step 10 3. Add veggie slices on top, trying not to overstuff.
- Step 11 4. Roll collard roll as you would a burrito, half way tucking in the sides, then cut at a diagonal like a sandwich.
- Step 12 (Serve with garnish or side of your choice and enjoy! I like to add siete chips as a side)
- Step 13 You can prepare this meal ahead of time for your work lunch too!
