Waldorf Chicken Salad

Ingredients
- 2 cups shredded chicken
- 1/2 cup grapes, halved
- 1/3 cup celery, chopped
- 1/3 cup red onion, chopped
- 1/4 cup walnuts, chopped
- 1/2 tsp black pepper (omit if AIP)
- 1 tsp sea salt
- Juice of 1 lemon
- 1/3 cup paleo mayo
Directions
- Step 1 1. Add 2 cups of shredded chicken to a large bowl.
- Step 2 2. Chop (grapes, celery, red onion, walnuts), add to bowl.
- Step 3 3. Add paleo mayo and lemon juice to the chicken bowl.
- Step 4 4. Combine ingredients with a spoon.
- Step 5 5. Serve over a bed of greens of your choice (spinach, arugula) and enjoy!
