Ingredients
  • 2 cups shredded chicken
  • 1/2 cup grapes, halved
  • 1/3 cup celery, chopped
  • 1/3 cup red onion, chopped
  • 1/4 cup walnuts, chopped
  • 1/2 tsp black pepper (omit if AIP)
  • 1 tsp sea salt
  • Juice of 1 lemon
  • 1/3 cup paleo mayo
Directions
  • Step 1 1. Add 2 cups of shredded chicken to a large bowl.
  • Step 2 2. Chop (grapes, celery, red onion, walnuts), add to bowl.
  • Step 3 3. Add paleo mayo and lemon juice to the chicken bowl.
  • Step 4 4. Combine ingredients with a spoon.
  • Step 5 5. Serve over a bed of greens of your choice (spinach, arugula) and enjoy!
