Ingredients
  • 1 pound lean ground beef (90% lean)
  • 1/4 cup chopped onion
  • 1 cup nomato sauce
  • 1/2 cup sliced pimiento-stuffed olives
  • 1/4 cup raisins
  • 1 tbsp apple cider vinegar
Directions
  • Step 1 1. Prepare NOmato sauce, if not already prepared.
  • Step 2 2. In a large skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 5-8 minutes.
  • Step 3 3. Stir in nomato sauce, olives, raisins and vinegar. Bring to a boil.
  • Step 4 4. Reduce heat. Simmer, uncovered for 5 min. Then cover and simmer for another 5 minutes or until raisins are softened.
  • Step 5 5. Serve with rice, quinoa, grain-free rice of choice or crispy tostones (recipe here) fried in coconut oil. If desired, top with fresh cilantro to serve.
