Ingredients
  • 2 Tbsp coconut oil or cooking oil of choice
  • 1 small yellow onion chopped
  • 4 cloves garlic minced
  • 3 large carrots peeled and chopped
  • 1 lb Organic ground turkey
  • 1 Tbsp chopped ginger
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/4 tsp ground turmeric
  • 1 tsp sea salt to taste
  • 2 small yellow squash chopped
  • 4 cups bone broth (may use chicken stock)
  • 1 Tbsp fresh lemon juice
  • 3 Tbsp coconut aminos
  • Arrowroot starch (optional thickener)
Directions
  • Step 1 Prep your ingredients (washing, chopping, peeling).
  • Step 2 In a large pot, heat the coconut oil over medium heat. Add the onion and saute, stirring occasionally, until it has softened, about 4-5 minutes. Add the garlic and carrots and continue sauteing another 2 minutes.
  • Step 3 Push the vegetables off to one side of the pot and add the ground turkey breaking apart with your hands or a wooden spoon.
  • Step 4 To the ground turkey, add ginger, oregano, basil, parsley, turmeric, and sea salt.
  • Step 5 Brown turkey for 4 minutes, toss around and brown for another 4 minutes.
  • Step 6 Add remaining ingredients, stir everything together, cover the pot & bring to a boil.
  • Step 7 Once boiling, reduce heat to a simmer and cook for about 30 minutes, stirring occasionally.
  • Step 8 Should be done after 30 minutes, but if you prefer a thicker consistency, start adding in arrowroot starch (1 tbsp at a time). Mix well to avoid clumps.
