Baked Pork Tenderloin

Ingredients
- 1 pork tenderloin (about 1 lb)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tbsp cooking oil
- 1/4 cup beef broth
- 1 tbsp apple cider vinegar
- 1/2 tbsp butter (can sub ghee for dairy-free)
Directions
- Step 1 Preheat your oven to 400 degrees. Dry the pork tenderloins well with paper towels.
- Step 2 Mix the garlic powder, onion powder, oregano, salt, and pepper together in a small bowl. Rub this spice mix over all sides of the pork.
- Step 3 Heat the oil in a large frying pan over medium-high heat. Add the pork. Sear the pork on all sides until it is brown, about 2 minutes per side (8 minutes total). Take the pan off the heat.
- Step 4 Move the pork to a baking dish. Return the pan to the heat and add the beef broth. Scrape the bottom of the pan to remove any stuck on bits, then boil for 1 minute until it reduces and appears to thicken. Pour this sauce over the pork.
- Step 5 Pour the apple cider vinegar over the pork then top with a few slices of butter. Cover the baking dish with foil.
- Step 6 Bake the pork for 25-35 minutes, or until it reaches an internal temperature of 145 degrees. Let the pork rest for 5 minutes before slicing into 1/4 inch thick rounds. Serve with your favorite side. I like a simple salad and baby potatoes.
