Gingery Mushroom Soup w/Noodles

Ingredients
- 1 tbsp Toasted sesame oil
- 5 (1/4 inch) thick slices fresh Ginger
- 3 cloves Garlic, thinly sliced
- 2 cups Organic beef bone broth
- 2 tbsp Coconut aminos
- 6-8 oz Mushrooms
- Noodles of choice (kelp for low-carb option, rice noodles, etc)
- Green onion, for topping
Directions
- Step 1 Heat the oil in a large pot over medium-high heat until shimmering. Add the ginger & garlic and cook, stirring constantly, until the garlic is slightly golden around edges, about 1-2 minutes.
- Step 2 Carefully add the broth and coconut aminos. Bring to a boil. Meanwhile, slice up the washed mushrooms.
- Step 3 Add mushrooms to the boiled soup, stir to combine, and bring back to a boil. Lower the heat to maintain a simmer.
- Step 4 Add in the noodles, stir and monitor until cooked.
- Step 5 Serve in your favorite bowls, topped with freshly chopped green onions and enjoy!
