Ingredients
- 2 Tbsp coconut oil or cooking oil of choice
- 1 small yellow onion chopped
- 4 cloves garlic minced
- 3 large carrots peeled and chopped
- 1 lb Organic ground turkey
- 1 Tbsp chopped ginger
- 2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/4 tsp ground turmeric
- 1 tsp sea salt to taste
- 2 small yellow squash chopped
- 4 cups bone broth (may use chicken stock)
- 1 Tbsp fresh lemon juice
- 3 Tbsp coconut aminos
- Arrowroot starch (optional thickener)
Directions
- Step 1 Prep your ingredients (washing, chopping, peeling).
- Step 2 In a large pot, heat the coconut oil over medium heat. Add the onion and saute, stirring occasionally, until it has softened, about 4-5 minutes. Add the garlic and carrots and continue sauteing another 2 minutes.
- Step 3 Push the vegetables off to one side of the pot and add the ground turkey breaking apart with your hands or a wooden spoon.
- Step 4 To the ground turkey, add ginger, oregano, basil, parsley, turmeric, and sea salt.
- Step 5 Brown turkey for 4 minutes, toss around and brown for another 4 minutes.
- Step 6 Add remaining ingredients, stir everything together, cover the pot & bring to a boil.
- Step 7 Once boiling, reduce heat to a simmer and cook for about 30 minutes, stirring occasionally.
- Step 8 Should be done after 30 minutes, but if you prefer a thicker consistency, start adding in arrowroot starch (1 tbsp at a time). Mix well to avoid clumps.
