Tuna Pasta Salad (GF, DF, Paleo)

Ingredients
- 1 cup Paleo Mayo (I use Primal Kitchen brand)
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 5-7oz can tuna
- 1/2 pasta box (about 6-7 oz gluten-free macaroni, elbow, or bow-tie pasta, cooked and cooled)
- 2 stalks celery, chopped
- 1/2 red onion, diced
Directions
- Step 1 Cook pasta according to pasta instructions.
- Step 2 While pasta is cooking, prepare dressing in a small bowl: Combine the paleo mayo, lemon juice, garlic, salt and pepper. Set aside.
- Step 3 Drain the canned tuna and add to a bowl. Mash with a fork to break up the tuna.
- Step 4 In a large bowl, combine the cooked & cooled pasta, celery, red onion, tuna and stir to combine.
- Step 5 Add the mayo dressing and stir well to fully combine and coat the pasta salad.
- Step 6 Serve fresh topped with fresh herbs like dill or parsley.
