Strawberry Chia Jam

Ingredients
- 2 cups frozen strawberries
- Juice of 1 lemon
- 6 Tbsp pure maple syrup
- 1 tsp vanilla extract
- 3 Tbsp chia seeds
Directions
- Step 1 1. In a small skillet, add the strawberries, lemon juice and 2 Tbsp water.
- Step 2 2. Simmer over medium heat for 10 minutes, stirring occasionally. 1/2 way through, begin mashing the berries with a fork.
- Step 3 3. Once the berries are mashed up, stir in the maple syrup, vanilla extract, & chia seeds until combined.
- Step 4 4. Turn off the heat. Let the skillet sit for about 8 minutes until the chia seeds thicken the jam.
- Step 5 5. Transfer to a jar and refrigerate.
- Step 6 6. Store in fridge for up to 2 weeks.
