Nightshade-Free Cuban Picadillo

Ingredients
- 1 pound lean ground beef (90% lean)
- 1/4 cup chopped onion
- 1 cup nomato sauce
- 1/2 cup sliced pimiento-stuffed olives
- 1/4 cup raisins
- 1 tbsp apple cider vinegar
Directions
- Step 1 1. Prepare NOmato sauce, if not already prepared.
- Step 2 2. In a large skillet, cook and crumble beef with onion over medium-high heat until no longer pink, 5-8 minutes.
- Step 3 3. Stir in nomato sauce, olives, raisins and vinegar. Bring to a boil.
- Step 4 4. Reduce heat. Simmer, uncovered for 5 min. Then cover and simmer for another 5 minutes or until raisins are softened.
- Step 5 5. Serve with rice, quinoa, grain-free rice of choice or crispy tostones (recipe here) fried in coconut oil. If desired, top with fresh cilantro to serve.
