Paleo Meatball Pho

Ingredients
- 1 pound ground pork
- 2 scallions
- 2 tsp coconut aminos
- 2 tsp sesame oil
- 1 tsp frech grated ginger
- Seal Salt, to taste
- 4 cups bone broth
- 1 packets of Kelp noodles
- 1-2 cups spinach
Directions
- Step 1 1. Preheat the oven to 400F.
- Step 2 2. In a medium bowl, combine pork, scallions, coconut aminos, sesame oil, ginger. Mix everything together.
- Step 3 3. Roll the meat into balls.
- Step 4 4. Arrange the meatballs on the baking sheet.
- Step 5 5. Bake for 20 minutes or until completely cooked through, then set aside.
- Step 6 6. In a sauce pan, warm up the bone broth and add in the kelp noodles and spinach.
- Step 7 7. Add in the meatballs and cook on medium heat for about 6 min.
- Step 8 8. Serve in bowls, garnish with some chopped scallions.
